Thanksgiving Leftover Recipe–Turkey Enchiladas

Are you looking for something to do with your leftover Thanksgiving Turkey? Try this delicious recipe for Turkey Enchiladas.

Ingredients
  • 2 cups shredded Cheddar and Monterey cheese blend
  • 1 onion, chopped
  • 1 (2 ounce) can sliced black olives
  • 24 (6 inch) corn tortillas
  • 1 (19 ounce) can red enchilada sauce
  • 4 cups cooked turkey, chopped
Directions
  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  2. In a small bowl, combine the cheese, onion, and black olives.
  3. In a small skillet, heat enough oil to lightly coat one tortilla, and cook until soft. Remove and dip in enchilada sauce to coat.
  4. Add turkey and cheese mixture to center of tortilla, roll and place in the prepared dish. Repeat until bottom layer of pan is covered with enchiladas. Spread enough sauce over bottom layer to cover.
  5. Repeat process with a second layer; spread remaining sauce on top and sprinkle with remaining cheese mixture. Bake 20 minutes in the preheated oven, or until cheese is melted.

Wocka Wocka is a stunning shimmery red color. The color based on the bottle does not do it justice! When applied, it gives off a rich red wine color. This could easily become my favorite shade for the fall/winter season!

Quick Apple Crisp Recipe

My backyard is full of falling apples right now and my favorite thing to do with sweet apples is to bake a Quick Apple Crisp and serve it up with ice cream.

Here is a recipe for an easy, yet delicious apple crisp.

Ingredients:

  • 5 Granny Smith Apples (about 6 cups)
  • 1/4 cup butter or margarine, melted
  • 1/2 cup chopped nuts
  • 1 package (9 ounces) of yellow cake mix
  • 2 tablespoons of sugar
  • 1 tablespoon Cinnamon
  • vanilla ice cream or thawed frozen whipped topping (optional)

Instructions:
  • Preheat oven to 350 degrees. Peel, core, and slice apples. Cut apples in half. Place apples in a baking dish baker.
  • Place butter in bowl and microwave on high for 60 seconds or until melted. Chop nuts. Add nuts, cake mix, sugar and cinnamon to batter bowl; mix until crumbly. Sprinkle mixture evenly over apples.
  • Bake 35-40 minutes or until apples are tender and topping is golden brown. Serve warm with ice cream, or whipped topping.
